EINSTEIN Book of Recipes
Below you can find the EINSTEIN Book of Recipes. This recipe book was created within the EINSTEIN project as a practical and inspiring part of the EINSTEIN Food platform, dedicated to functional food and innovative approaches to its production.
The recipes were developed as a result of collaboration and knowledge exchange between the University of Novi Sad (UNS) and Wageningen University & Research (WUR), with the aim of bringing the idea of healthy, sustainable, and nutrient-rich nutrition closer to a wider audience.

The charts below show blood glucose response after consuming 30 g of carbohydrates in different forms: a commercial bar, high-protein bar, high-fiber bar, high-fat bar, and banana. Results are shown separately for two participants, highlighting how individual responses can vary depending on the food composition and the person’s metabolism.
